Zataar to the rescue!


Zataar Bread. I'm glad to share this great recipe that has been with me for years. It's fast and and wonderful tasting.  I often add this bread to a salad or any other foods that you are preparing.

Zataar Flat Bread (Manaeesh)

Yield: 4 flat breads

Manakish, manakeesh or Manaeesh in Arabic it's called (مناقيش‎) consisting of dough topped with cheese or thyme or ground meat, but used widely in Lebanon, Syria, Jordan and Palestine. Similar to a pizza, it can be sliced or folded, and traditionally is either served for breakfast or lunch. Suzanne has adapted this recipe to make a easy healthy version that is easy delectable crispness.


Zaatar Spread
1 med tomato (diced) optional
1/2 cup Olive Oil
1/4 tsp salt
4 Ezikiel flat bread or rice flat bread (for a gluten free version)*


Preparation

  1. Mix together the Zaatar spread by adding the ingredients above to a bowl. Mix together. Also add the diced tomato if you choose that option and mix together.
  2. On a cookie sheet place the flat breads spaced out just touching each other.
  3. Take a spoon and spread the mixture on the bread. Spread with back of spoon or your hands right to the edges of the bread.
  4. Place under the broiler till the flat breads are bubbling and turning brown.
  5. Take out of oven and server with a dip or just eat this crispy and tasty treat.

*Some farmers markets have a local company that makes flat breads (not pita bread) from spelt and Kamut. They would work great with this recipe too. I have one locally that I use all the time and love that option.
