Carrot-Squash Soup 8 large servings
This recipe brings back memories. Shantih and I were living together and sharing a kitchen. We both love to be creative with recipes and really share the love of food. So this is one of the recipes that has stood the test of time. I hope you have fun sharing this wonder warming soup.
Ingredients
2
1 liter cartons of Organic vegetable broth
2
cans of coconut milk
2
tsp green curry paste
½
bag of baby carrots or equivalent amount of larger carrots
1
large acorn squash (pealed)
½
lemon, fresh squeezed
Sea
salt to taste
Directions

In a large soup pot cook the carrots and squash and puree in
blender or hand held blender right in the pot. Retain liquid and blend into
soup.

Return puree to pot if using a blender.

In a Soup pot add broth, coconut milk and green curry

Heat to near boil and then simmer
5
Add lemon
6
Add salt
