Turns up, I like Roasted Turnips
Who would have thought that I would like to use turnips in a way that I love. When I first tried this recipe I was so sure I wouldn't like it, I added other root veggies to the roasting pan to make sure I had enough to eat.  Was I wrong I loved the turnips! The beets and cauliflower are keepers too.

Ingredients

Drizzling Sauce
1 tlb apple cider vinegar
11/2 tlb whole grain mustard or Dijon can be used too.
2 tlb fresh chopped parsley or dried if that is all you have
1/2 cup organic extra virgin olive oil
Salt and freshly ground pepper to taste

Root Vegetables
6 baby turnips - cut in half or 1/4 ‘s if they are larger.
10 pieces of cauliflower – cut into 1x1/2 chunks
1 med beet – cut into 1 inch size pieces

Directions
  1. Pre heat the oven to 450 deg.
  2. In a bowel place the cut up turnips and add half of the olive oil to coat the vegetables sprinkle with sea salt and ground pepper.
  3. Transfer the vegetables to a baking sheet
  4. Roast the vegetables till they are firm but easy to eat, 20 to 30 mins
  5. While the turnips are roasting, add all the above ingredients for the drizzling sauce into a small bowel and stir with a spoon.
  6. When the vegetables are done roasting. Serve with the drizzling sauce over the vegetables

So crazy good you will be considered a chef in your own home.

Turnip facts
Turnips resemble potatoes in texture and appearance but exude a bitter flavor that pairs well with sweet meat like pork. This root vegetable can be found year-round in the produce section but is in season from October through March in most areas. Adding turnips to your diet provides you with a number of vitamins and minerals to benefit your overall health.
Vitamins
One cup of mashed turnips contains about 27 mg of vitamin C, an antioxidant. Most adults should consume between 75 and 90 mg of vitamin C daily to support tissue repair and immunity. Turnips also provide most of the B vitamins, including riboflavin, thiamin, niacin, foliate and pantothenic acid. One cup also has 0.2 mg of the 1.3 mg of vitamin B6 you need daily. The B vitamins help with fat, carbohydrate and protein metabolism; nervous system function; and healthy skin, hair, eyes and liver.
